A rather deceptive variant of cakelog, the red velvet is actually a type of chocolate cake! The red color is thanks to a chemical reaction between vinegar and the unprocessed cocoa powder, which is sometimes enhanced with a small amount of beet juice for brighter red cake. Neither the vinegar nor the beet juice can be tasted however. In terms of taste, it’s usually put somewhere between vanilla and normal chocolate cake. The cake roll is filled with cream cheese frosting and either given a dusting of powdered sugar or a thin layer of frosting with red sanding sugar on top.
